Media player classic + CCCP is the best on windows.
On the 'nixes you are stuck with VLC which has terrible codecs and screws up the subtitles on my newfound weaboo media stash, or totem. I recommend totem just because it's easier to configure with proprietary codecs.
edit: I forgot about Mplayer. That's also an option on any platform, but in my experience you are better off with MPC+CCCP.

Foobar2000 is a very minimal player that supports plugins and custom interfaces.

What redeeming qualities does Itunes have if you don't have an ipod? I've heard plenty of stories (and experienced) itunes going belly up and forcing you to rescan/reobtain your music, and I don't see any other features that other music players don't have.

Can Foobar handle music files containing foreign characters?

Oh, and I'm not sure about the interface stuff, but the front page for both sites says they're easily customizable, I think. Something along those lines, at least.
Songbird:Supported Audio Formats
Native Support ("out-of-the-box"):

Supported through optional components:
* TTA, Monkey's Audio, ALAC, MOD, SPC, Shorten, OptimFROG, AC3, DTS, PSF, NSF, XID, XA, MMS, RSTP, TAK, etc.
In addition, foobar2000 can also play music directly from compressed ZIP and without requiring the user to extract the files prior to playing. More archive formats supported through additional components: JMA, LHA.
foobar2000 has been written for the Windows platform only. Ports to other platforms are not planned. However, several people have had success running foobar2000 on x86 Linux systems by using Wine.

Pretty easy stuff to find if you'd try checking. =PWith the QuickTime Playback and Window Media Playback add-ons installed, Songbird can play all the popular music formats including MPEG Audio (mpga), MPEG Layer 3 (mp3), MPEG4 family including FairPlay (m4a, m4v, mp4, m4p, m4b), Ogg Vorbis, Speex, AAC, WMA, WMADRM, FLAC, and less important: LPCM, ADPCM, AMR. If you're a developer, teach Songbird how to play your favorite format!

Let me post a screenshot of my songbird player at the moment. (You'll need to "view image" in a seperate window because VZ is so small.)
Things to note:
- It is very sexy looking. That is the "Feather" (songbird version of skin) Yet Another Black Songbird.
- The Filter Pane, the rating/arist/CD thing at the top. It is awesome and very customizable (you can remove it entirely if you want, but I can't imagine why you would!) You can pick any three criterion to set up there (out of a larger list), and I find by far the most helpful is rating/artist/CD. (If you don't use ratings, perhaps genre?) You can, for example, filter by one artist and then control click two CD's to listen, turn on random, and listen to a random selection of songs on just those two CD's in seconds.
- Filter Pane is also great for burned CDs. My friend made me a CD; by giving it a fake CD name I can easily keep the rest of the track info correct and still reach just the contents of the CD in a single click. You'll notice that in the picture - 'Ameliarate' is not a real CD.
- Helpful search bar at the top, and it works with the filter pane.
- See the "Concerts (5)" on the left? I set my local area, and now whenever any band in my library goes on tour in my area songbird automatically lets me know.
- You can use a mini-player, smaller than the bottom play bar and with all the relevant buttons. You can set it to always on top to see songs whilist you browse the net.
- Super-modular beyond just how I have it set up.

I tried them both, and as always my OCD came out like a fire alarm when I saw everything out of order and shit. I don't even know why it would change the order of an album. But right now, Songbird looks alot more promising.

Loki, it goes alphabetical, but if you want it in original order just right-click the bar that has "Title" "Artist" and the ilk, select "track number", and sort by that. Though obviously if you're dealing with more than one CD it gets tricky.
